
I bought some beautiful white peaches the other day with no intentions, just for a juicy snack. However, I got an idea last night to use them for popsicles, so I grabbed some ingredients I had on hand and whipped up some yummy peaches n’ cream pops!
I sort of “winged” it because I’ve made similar popsicles before, but here’s what I used:
3 fresh peaches (sliced, drizzled with honey and sprinkled with seasalt, roast in oven on 350 degrees for 30 minutes)
About 2 c. plain greek yogurt
Honey, to taste
1/2 tsp. Vanilla
Milk, to your preference (I didn’t want mine too thick so I used milk to thin out the yogurt to the consistency I wanted)
Combine all ingredients and pour into molds, freeze.
I only have 4 molds, so if you have more, you’ll have to adjust ingredients accordingly.
Yum!
Next time I’m going to try coconut milk and maple syrup instead of honey for a natural sweetener. I think the coconut milk will be a great combo with the peaches.
